This time its Christmas season!!had idea to go butter-less!!made microwave eggless cake to keep it simple and health worthy.I always appreciate and enjoy that each variety of cake(egg-less or with egg) have different qualities as one would expect there are tons of cake varieties available around the globe.The cinnamon and nutmeg powder’s are two flavor enhancers in this cake.The aroma of eggless date cake in microwave is very distinct!It is totally soft in the center and the corners are slightly dense and little chewy!still it stands out to be a perfect evening snack.Some quality dates are soft by itself and need not be soaked,but the dates I had needed soaking!!it soaked for good 1 hour.Generally minimum twenty minutes soaking itself is okay.I microwaved it in micro high 100% for 10 minutes then reduced to 80% for 7 minutes that’s it my cake was all done..

INGREDIENTS:
Maida/all purpose flour – 1 cup
Dates(pitted) – 150 gms(soaked in milk)
Milk – 300ml(approx)
Flax-seed powder – 1 tbsp
Walnut crushed – 1 hand full
Cinnamon powder – 1/4 tsp
Nutmeg powder – a pinch
Sugar – 3/4 cup,Oil – 80 ml(1/3 cup)
Salt a pinch
Baking soda 3/4 tsp
METHOD:
1.Grease a compatible glass ware and keep ready and soak dates in milk for 20 minutes.
2.Grind soaked dates, then add oil and sugar and blend well till smooth.
3.In-between sieve maida with baking soda and salt,then add crushed walnuts and keep it.
4.Add Cinnamon powder,nutmeg and flax powder to ground dates and mix well.
5.Add this to maida mixture and combine well,add remaining milk and bring it to cake batter consistency(ribbons form).
6.Use up the milk to make up the consistency.
7.Pour the cake batter to the glass bowl and micro high 100% for 10minutes then reduce to 80% for 7 minutes.
8.The cake is ready after it cools.

Notes
The timing may differ from oven to oven .
Soak dates at least for twenty minutes depending on the variety.
But I have soaked it for more than one hour.
When baking always leave gap for raising with suitable container.
Don't use steel tins to cook in microwave,use microwave compatible glass or porcelain.
