Most of the restaurants here serve only selected kind of soups as starters like sweet corn soup,veg-non-veg clear-soups to name a few though the lists are endless.Soups are served as starters to induce hunger and for boosting your immune system.Soups may be creamy,thin or chunky but each one serves a purpose.If thick and chunky then you will be in no need of taking more food after it.Some clear and light soups are mostly hunger inducing soups served before a meal.This cream of celery soup recipe is really a creamy kind of soup with minimal ingredients.In India rasams and shorbas are seriously considered as soups.Mainly these rasam variations are the accompaniment for rice and sometimes it’s sipped as soups if you have cold and throat infections.These rasams becomes an excellent source for easy digestion.Most commonly the soups around the world too have the same therapeutic concept like adding additional nutritional goodness to our diet.This cream of celery soup recipe is easy to make with no complex ingredients.

INGREDIENTS:
Celery(only stalks) – 2-3(finely chopped)
Onions finely chopped – 1(medium)
Fresh cream – 1 tbsp
Milk – 11/2 cups
Salt to taste
Sugar – 1/2 tsp
Pepper powder – 11/2 tsp
Maida/allpurpose flour – 1tbsp
Butter – 11/2 tbsp
Garlic -1/2 tbsp (finely chopped)
METHOD:
1.Keep the ingredients ready(chop celery very fine,even onion).
2.Keep a pan add butter with garlic and saute till transparent.
3.Then add celery and saute nicely.
4.Now add onions till translucent.
5.Add maida and stir well for a minute add milk,stir in nicely without any lumps.
6.Now add sugar and salt as per taste.
7.Let it boil for 5 minutes.
8.You can adjust the consistency by adding water or even milk at this stage.
9.Add pepper powder and cream stir once and switch off.
10.Serve hot.

- Now add sugar and salt as per taste.
- Let it boil for 5 minutes.
- You can adjust the consistency by adding water or even milk at this stage.
- Add pepper powder and cream stir once and switch off.
- Serve hot.
Notes
If you don't have cream just skip that part.
Even white pepper powder can be used.
Celery should be finely chopped for this soup.
You can adjust the consistency according to your need.
