When it comes to baking till now have not tried anything spicy but had already put bakery style salt biscuits in my space.It was an unusual experience for me to use coriander and curry leaves that too into baking.Its a famous khara biscuits available at all iyengar bakery shops and in some areas they call it as chilli biscuits. Mostly for chilli biscuits/Khara biscuits they don’t add ginger but at some places they do add ginger for extra punch.There may be tons of biscuit brands available at stores but anything homemade is very much superior than these top rated brands.Its not a kind of complicated baking at all its made with very simple ingredients that are always available in your kitchen pantry.It was totally enjoyable and biscuits came out damn good.It was melt in your mouth type of biscuits with great tint of spiciness.Its a great addictive tea time snack.
chilli biscuits /savoury cookies(chili)/masala khara biscuits
INGREDIENTS:
All purpose flour/maida – 150 gms
Powdered sugar – 1 tbsp
Butter – 75 gms(cold and slightly stiff not soft)
Curd – 2-3 tbsp
Baking powder -3/4 tsp
Salt – 1/4 tbsp
To grind:
Green chillies – 1-2 (medium)
Curry leaves – 5-6 no
Coriander leaves – 2 strings
Ginger – 1/4 inch piece
2 tbsp water to grind
METHOD:
1.Set all ingredients ready.
2.Grind “to grind” ingredients with water and make paste,keep ready.
3.Set the oven tray with aluminum foil and keep ready.
4.Now sieve maida,powdered sugar,salt and baking powder in a mixing bowl.
5.Add butter and crumble it with hands like bread crumbs.
6.Now add in 1 tbsp of the ground paste and mix nicely.
7.Then add in the curd and form a smooth dough.
8.Spread this in clean work surface with a polyethylene sheet spread over it so that it does not stick.
9.Roll with a rolling-pin with 1/4 inch thickness.
10.Cut with a cutter with suitable shapes.
11.In-between preheat oven at 180 degrees for 10 minutes.
12.Arrange in the plate that has been lined.
13.Bake for 30-35 minutes or as per your oven timings.

Notes
Butter should not be soft it should be stiff enough so,that it can form bread crumbs when mixed.
Curd is used for moistening the dough otherwise even milk can also be used.
Add spice paste accordingly for given amount of flour 1 to 11/4 tbsp itself is more than enough.
