Stir fries are damn good healthy for the reason that it makes the Indian lunch portions more filling and satisfying .Broad beans stir fry/Avarakkai poriyal is one such simple and tasty stir fry(s) that can be done in a jiffy!but each home have their own method of making this avarakkai poriyal(stir fry).I love-making my paati(s) method she used to steam the broad beans before hand and add some sugar when steaming which enhances the taste of the vegetable and color too does not change (restored). Instead of onion for extra crunch she cooks toor dal and adds it to the beans. Toor dal should be three fourth cooked which is best for these type of stir fries.After switching off let it be in kadai for some time so that all the moisture is absorbed.

INGREDIENTS:
Avarakkai/broad beans – 1 cup (chopped)
Split yellow pigeon peas/toor dhal – 2- 3 tbsp
sugar – 1 tsp
Salt to taste
Coconut scrapping – 2-3 tbsp
Mustard seeds – 1 tsp
Red chillies – 1-2,Oil – 1 tsp
METHOD:
1.Steam the vegetable with needed salt little sugar for 5 minutes(approx)and keep aside.
2.Boil toor dhal till three fourth done strain it and keep aside.
3.Keep a kadai add oil when it is hot add mustard seeds and chillies when seeds splutter add avarakkai to it and mix nicely.
4.At this stage check for salt if it is less you can correct it.
5.Then add toor dal and mix.
6.After that add coconut scrapping and switch off the flame.
7.Let it be in kadai for some time so that all the moisture is absorbed.
