apricot jam recipe using fresh apricots
Bunch of ripe fresh and firm apricots with sweet and tarty taste was sitting right in front of me and something should be done to them before it gets spoilt. First I was in a plan to do apricot upside down cake but recently only I have done pineapple upside down cake. so I dropped the idea and did apricot jam recipe using fresh apricots. The preserve was so delicious with bread and butter every one enjoyed it so much. Somewhere I read that eating the apricot seeds more than recommended will lead to
poisoning because of a component called amygdalin in the nut. I was shocked but don’t know about its truth-fullness. There is a famous sweet that is done in India using this apricot it is kubani ka meetha from Hyderabad. When making this jam if you feel that you don’t want the skin peel off but it is not necessary. As the skin is thin I have not peeled it chopped it and used it after grinding. If you want your jam to be more chunky slice it and add it don’t grind it as I have done.This apricot jam recipe using fresh apricots will be one of the delicious unique variation of jams that you have tasted.

INGREDIENTS:
Fresh apricots after taking out the seeds – 800 gms
Sugar – 600 gms
Lemon juice – 4-5 tbsp
METHOD:
1.First wash the apricots cut them into half and take out the seeds, then chop them.
2.Now add the sugar and mix.
3.Let it be as such for 2 hours the sugar liquidizes.
4.Then puree them in a mixie jar.
5.Now bring these to heat pouring it in a thick bottomed pan.
6.When it boils scum will be formed remove it completely.
7.At one stage the content thickens now to test take a drop of jam in a plate.
8.When it stays in and not watery then its done, there will be a nice shiny texture.
9.Switch off the stove add lemon juice and mix well.
10.Pour in a sterilized container and keep it in fridge and use.

The fruit should be ripe and firm to make this jam.
You can even peel the skin if you feel you will not like it.
