Idli kurma recipe /side dish for idli dosa

Ingredients
  

  • TO GRIND:

    Grated coconut - 1/4 cup

    Kasa kasa - 3 tsp

    Pattai/cinnamon - 1 piece

    Lavangam/cloves - 5-6

    Star anise - 1

    Greenchillies -3

    Elakkai/cardamom - 2

    Kal pasi /Dagad phool - 1 tsp

    Cashewnuts - big handful

    TO MAKE GRAVY:

    Oil - 4 tbsp

    Mustard seeds/kadugu - 1 tsp

    Chopped onion - 1/4 cup

    Some curry leaves

    Ginger Garlic paste - 2 tsp

    Turmeric powder - 1 tsp

    Chilli powder - 2 tsp

    Garam masala powder - 1 tsp

    Salt to taste

    Some chopped coriander

Instructions
 

  • In a mixer jar grind all the "to grind" ingredients by adding water & keep ready.
    2.Heat oil in a kadai make mustard to splutter.
    3.Then add some curry leaves & onions saute for a while.
    4.Add ginger garlic paste cook then till rawness goes off.
    5.Put in tomatoes with little salt saute till it cooks & oil oozes.
    6.Add turmeric powder,chillipowder &garam masala powder mix well.
    7.When rawness goes off add ground mixture with needed water for the kurma.
    8.Now add needed salt for the kurma let it boil for 10 minutes.
    9.Sprinkle some chopped coriander & you’re done.

Notes

  • You can use vegetables also in this kurma but I have not used any.
  • Take your time to sauté the onions, tomatoes, and spices until they are well-cooked and aromatic.
  • This step is crucial for building layers of flavor in your kurma.
  • Taste the kurma before serving and adjust the seasoning according to your preference.
