Ingredients
  

  • Horse gram/kollu/uruli sprouted- 2 cups

    green chilles - 2-3

    coriander seeds - 2 tbsp

    small onions - a fist-full

    Vadagam - small bit

    salt to taste

    For seasoning :

    Ghee - 2 tbsp

    Vadagam - tiny bit

    Mustard seeds - 1 tsp

    curry leaves - some

Instructions
 

  • How to make sprouts:
    Wash & Soak horse-gram for 6-8 hours then drain.
    Now add fully drained horse gram into a vessel with lid.
    Let it sprout for 1 day you can sprout for 2 days for long sprouts.
    2.Sprouted horse gram thuvayal:
    In a pressure cooker add sprouts with coriander seeds, green chillies,vadagam & small onions.
    Add water till every thing is immersed add needed salt.
    Close cooker leaves for many whistles.
    When sound subsides open cool it completly.
    Grind this to a thuvayal take out in a vessel.
    Make tadka with ghee, mustard to splutter ,then vadagam & some curry leaves.
    Add this to thuvayal mix well.
    Serve with hot rice with dollop of ghee.

Notes

  • Sprouting horsegram increases its nutritional content. The sprouting process activates enzymes, which leads to higher levels of vitamins, minerals, and antioxidants.
  • Sprouted horsegram is particularly rich in protein, dietary fiber, calcium, iron, and phosphorus.
  • You can add a pinch of hing while making tadka.
  • If you are not using ghee then use gingelly oil or any oil.
