4 in 1 batter with Ragi /soft idli’s dosa,uthappam appam

Ingredients
  

  • Whole ragi - 11/4 cups

  • Idli rice - 3/4 cup

  • Urad dal(whole) - 1/2 cup
  • Fenugreek seeds/vendhyam - 1/2 tsp

  • Aval/poha - 1/4 cup

  • Rock salt for batter

For Appam:

  • Ragi batter - 1 cup

  • Coconut milk - 1/4 cup

  • More water to dilute

Instructions
 

  • 1.Wash and soak ragi, rice, urad dal with fenugreek all in one bowl for 4-6 hours.
    2.Then when it gets soaked use same water and grind to a smooth batter.
    3.Add needed rock salt and mix well.
    4.Let it ferment for 8 hours.
    5.When it ferments lightly fluff up.
    6.Mix nicely heat a idli pot with water and steam as idli’s.
    7.Using same batter dilute it with little water and bring it to dosa batter consistency and make dosas.
    8.Next make uthappams.
    9.For appam batter add coconut milk and some water to bring to thin appam batter consistency,
    10.Make appams and enjoy.

Notes

  • You can grind it in wet grinder to smooth batter.
  • Ragi mixture should be soaked well.
  • Fully fermented batter gives perfect idlis, dosas and uthappams.
  • For appam make the batter to right consistency to get nice appam.
