Healthy Lunch box Recipe/ Keerai Sadham/ Variety rice

Ingredients
  

  • Rice (puzhungal/pacharisi) - 1 cup

    (Cook rice and spread on a basin and let it cool)

  • Lemon juice - 3 tsp

For grinding:

  • Amaranth leaves(serukeerai/mulakeerai) - (one handful washed drained)

  • Oil - 2 tsp

  • Ulutham paruppu/urad dal -1 tsp

  • Kadala paruppu/bengal gram - 1/2 tsp

  • Green chillies - 2

  • Garlic with skin- 4-5

  • Small onions - one handful

  • Grated coconut - 1 tbsp

  • Salt as needed

For tadka:

  • Oil - 1 1/2 tbsp

  • Ghee - 2 tbsp

  • Mustard/kadugu - 1 tsp

  • Kadalaparuppu/bengal gram - 1/4 tsp

  • Ulundhu/urad dal - 1/2 tsp

  • Broken cashews - 2-3 tbsp

  • Asafoetida/hing - 1/4 tsp

Instructions
 

  • Cook rice and fluff up rice and let it cool.
    2.In kadai add ghee-oil mixture make mustard to splutter with Bengal and urad dal, add cashews and when its golden add hing.
    3.Add this to rice and mix nicely.
    4.Keep the same kadai with oil add both dals with green chillies, small onions, garlic saute well.
    5.Add grated coconut and Keerai and necessary salt for rice.
    6.Sprinkle water and cook Keerai.
    7.Now add to a mixie and grind to coarse paste.
    8.Add this to rice and mix up.
    9.Add lemon juice and mix.
    10.Serve with potato masala or fry or appalam.

Notes

  • Don’t over cook rice for making this sadam.
  • You can use basmati rice or any ordinary rice.
  • Don’t over cook Keerai it may loose its colour and nutrients.
  • This rice can be made using siru-keerai,ara-keerai, mula-Keerai or even palak leaves.
