Ingredients
  

  • Coriander seeds/kothamalli - 1 cup

  • Cumin/jeera -1/4 cup

  • Cinnamon/pattai - 3-4 (2 inch pieces)

  • Clove/lavangam - 7-8

  • Poppy seeds/khus/khus - 1 tbsp

  • Sombu/aniseed - 1 tbsp

  • Vendhyam/fenugreek - 11/2 tsp

  • Pepper/milagu - 2 tbsp

  • Kadala paruppu/bengal gram - 21/2 tbsp

  • Ulundhu/urad dal - 11/2 tbsp

  • perungayam/hing - 1 tsp

  • Arisi/rawrice -3 1/2 tbsp

  • Some curry leaves

Instructions
 

  • Keep all ingredients ready.
    2.Heat a kadai when it heats up dry roast all the given ingredients.
    3.First dry roast coriander till nicely roasted take out.
    4.Dry fry urad dal and bengal gram till it golden take out.
    5.Add in the rice fry nicely till colour changes lightly.
    6.Put cumin and sombu together roast till done.
    7.Next add vendhyam and milagu.
    8.Khus khus is added till it pops.
    9.Add curry to become crisp.
    10.Then add cloves, and cinnamon fry till nicely aromatic.
    11.Add hing when about to grind.
    Let every thing cool on a plate.
    When cool grind in a spice grinder to a powder.

Notes

  1. Roast ingredient in medium high flame don’t burn the spices in high flame.
  2. Adding curry leaves is optional..
  3. Keep in airtight container to lock the flavours.
