eggless date walnut cake / dates cake recipe

Ingredients
  

  • Dates (pitted) - 95 gms /1/2 cup

  • All purpose flour/maida - 100gms / 3/4 cup

  • Milk - 160 gms /3/4 cup

  • Brown sugar - 80 gms /1/2cup

  • Butter - 45 gms /1/4 cup

  • Baking soda - 1/2 tsp

  • salt a pinch
  • Baking powder - 1/2 tsp

  • Vanilla essence - 1/2 tsp

  • Chopped walnuts - 1/2 cup

Instructions
 

  • In a pan boil milk and when boiling add pitted dates and simmer for 5 minutes and switch off and let it cool.
    2.When its slightly cool make a paste in a mixer jar add baking soda and keep ready and let it be warm enough when added to cake mixture.
    3.In a bowl add maida baking powder and salt mix well and keep.
    4.In a mixing bowl add butter and sugar beat well till fluffy with vanilla essence till light.
    5.Then add the flour mixture little at a time and when all the flour is used up it may form lumpy dough.
    6.Now add the warm dates paste and mix well without lumps till smooth with walnuts.
    7.In-between preheat oven at 180 for 10 minutes and grease a loaf tin with butter and maida and line with parchment or a cake pan as I have done.
    8.Pour into cake tin and can sprinkle some more walnuts on top and bake for 30 minutes or more till done.
    9.check for doneness and take out, cool for 10 minutes then demould and cut.

Notes

I have used brown sugar you can use even regular sugar but taste differs.
Oven temperate differs you should know your oven and bake accordingly.
The dates mixture should be warm enough when mixing the cake so that the texture comes out perfect.
I have given both cup and grams measure but its better to go with grams measure always for best results.
I have used brown sugar which was powdered so be noted.
