kashmiri pulao rice / nuts veg saffron pulav

Ingredients
  

  • Basmathi rice - 2 cups

  • salt to taste
  • Milk - 1/2 cup

  • Fresh cream - 1/2 cup

  • Water - 3 cups

  • Cumin - 1/2 tsp

  • Fruits(apple,pomegranate) - 1/2 cup

  • Nuts(Kismis,cahews,badam) - each 1 tbsp

  • Onion(small) - 1

  • Ghee and butter - each 3 tbsp

  • Bayleaves - 2

  • Cinnamon - 1 stick(small)

  • Cloves - 2-3

  • Cardamom - 2

Instructions
 

  • Soak rice for 15 minutes and drain and saffron in milk for some time.
    2.Keep a thick bottomed pan add ghee and butter when it heats up add cumin, bayleaves,cinnamom,cloves,cardamom then add rice and saute it carefully.
    3.Add fresh cream and saffron milk with needed water.
    4.Now add salt as needed when it starts boiling close the lid and cook.
    5.Cook the rice in low flame when all the water has nee absorbed.
    6.In-between add little ghee and fry the nuts golden and brown the onions separately and keep.
    7.Rice when done open the lid add all chopped nuts fruits and onions and gently fluff up the rice carefully.
    8.And done serve with any raita.

Notes

Cook the rice as I have told in the recipe and soaking is also important.
Adding cream gives a special taste and creaminess.
I have not added walnut if you have you can add.
Fruits like pineapple gives extra taste and texture you can very well add it.
Nice quality basmati rice gives a nice flavour to this dish.
