apricot jam recipe using fresh apricots

Ingredients
  

  • Fresh apricots after taking out the seeds - 800 gms
  • Sugar - 600 gms
  • Lemon juice - 4-5 tbsp

Instructions
 

  • First wash the apricots cut them into half and take out the seeds, then chop them.
  • Now add the sugar and mix.
  • Let it be as such for 2 hours the sugar liquidizes.
  • Then puree them in a mixie jar.
  • Now bring these to heat pouring it in a thick bottomed pan.
  • When it boils scum will be formed remove it completely.
  • At one stage the content thickens now to test take a drop of jam in a plate.
  • When it stays in and not watery then its done, there will be a nice shiny texture.
  • Switch off the stove add lemon juice and mix well.
  • Pour in a sterilized container and keep it in fridge and use.

Notes

If you want it chunky then you can make it as fine pieces and do the process without grinding.
The fruit should be ripe and firm to make this jam.
You can even peel the skin if you feel you will not like it.
