salem thattu vadai set recipe /marudhuskitchen

Ingredients
  

  • Small sized thattai’s - 30 or as needed
  • Carrots grated - 1 cup
  • Beetroot grated - 1cup
  • Onion - 1 small size thinly sliced
  • Raw mango grated - 1/4 cup
  • lemon juice optional I did not add
  • Salt for veggies
  • Some chopped coriander

For green chutney:

  • Green chillies - 6 or more according to spice
  • Salt to taste
  • Mint/pudhina leaves - one hand full
  • Coriander leaves - one hand full
  • Peanuts - 1 tbsp
  • Lemon juice - 1/2 tsp
  • A tsp of oil

For red chutney:

  • Garlic cloves - 6-7
  • Dried red chillies - 10
  • Tomatoes/thakkali - 4
  • Salt to taste
  • Tamarind /puli - a small bit
  • A bit of jaggery
  • A tsp of oil

Instructions
 

  • Grate vegetables and chop onions and keep every thing ready.
  • For green chutney add oil in a kadai and put all the ingredients in the list saute for few minutes and grind smooth finally add some drops of lemon juice.
  • For red chutney saute every ingredient given till the tomatoes are tender and cooked, cool and grind smooth.
  • Now every thing is ready.
  • Keep two thattai’s simultaneously apply green chutney in one and red in other.
  • In-between mix grated carrot beetroot, raw mango add some salt and keep, don’t add onions with this after some time squeeze the excess water from veggies lightly and keep ready.
  • Keep grated mixture on one of the thattai, add some onions, chopped coriander and close it with the other thattai and done.
  • Do all the other in the very same way and enjoy.

Notes

All the spiciness and tanginess can be added or lessened according to your taste.
There are so many variations of chutneys you can try with this thattu vadai set.
Small thattais will be bite sized and more suitable for this than the bigger ones.
Usually they add more vegetables for the stuffing and that will not only healthier but very tasty.
