tomato rice step by step recipe /easy thakkali sadam for lunch

Ingredients
  

  • Tomatoes - 4-5 medium tomatoes chopped normal country variety
  • Chopped big onions - 2-3 tbsp
  • Chopped garlic - 1 tbsp finely
  • Salt to taste
  • Chilli powder/milagai thol - 11/4 tsp
  • Coriander powder/dhania thool - 1 tsp
  • Turmeric powder/manjal thool - 1/2 tsp
  • Some curry leaves
  • Mustard seeds/kadugu - 1 tsp
  • Dry red chillies /kaintha milaga - 1-2
  • Gingelly oil /nallenai - 2 tbsp and some more as needed

Instructions
 

  • Prepare the chopping and ingredients ready.
  • Keep a kadai add gingelly oil and when it heats up add mustard to splutter,then add broken red chillies and curry leaves.
  • Then add chopped garlic and let it become golden then add the onions to become translucent.
  • Add chilli,turmeric and coriander powder,saute well till rawness of the powder goes away.
  • Now add tomatoes with needed salt,stir well and close lid(keep the flame medium).
  • The water oozes and cooks in its own juices.
  • Open the lid and keep the flame in normal,stir till all the contents dries up and oil oozes.
  • When oil oozes switch off the stove and its now ready to be mixed up with rice.
  • Keep the cooked rice ready mixing up with little gingelly oil to it.
  • Now add the tomato mixture,mix well and serve.

Notes

I have used gingelly oil for this rice to give nice aroma.
You can fine chop tomatoes so that it nicely blends with rice,even you can grind and add if you wish.
I have used normal rice but you can make it with any aromatic rice like basmati or zeeraga samba.
I have added little gingelly oil to cooked rice to get the grains of rice separated and puff up the rice.
