puri for panipuri /making pani puri

Ingredients
  

For making puri:

  • Fine rava/sooji- 2 cups
  • Salt - 1/2 tsp
  • Oil - 1 tbsp
  • Baking soda - 1 tsp
  • Needed water to make stiff dough
  • All purpose flour/maida - 2-21/2 tbsp

For assembling and to serve:

  • Mashed potatoes with chat masala mixed - 1 cup mashed with chunks
  • Finely chopped onions - 3/4 cup
  • Some chopped coriander
  • Green-chutney diluted in water and kept ready
  • Sweet chutney can dilute that also if needed
  • Some sev/omapodi or kara boondhi

Instructions
 

For making puri:

  • Take sooji in a bowl add baking soda,salt,oil and maida mix well.
  • Add water little by little make a stiff but pliable dough.
  • Knead continuously for at least 20 minutes.
  • Keep the bowl covered for marination for 30 minutes.
  • After that knead for sometime and finely the dough should be smooth.
  • Make portions of dough take each portion roll out thin and cut out with circular cutter.
  • In-between heat oil when its hot bring flame to medium and fry in batches adjusting the flame then and there.
  • Take out in a tissue and store in an airtight container.

For assembling and to serve:

  • Make every ingredient ready as told under "For assembling and to serve" section.
  • Make holes in puri's.
  • Fill in potato mix then some onion and chopped coriander.
  • Pour some drops of sweet chutney then needed green water.
  • Top up with sev and enjoy.

Notes

Roll out thin and rolling should be even to get it crispy.
Even black channa is added along with potatoes it will also be good if you add it.
Instead of sev you can use boondhi also.
Sometimes sooji and salt alone with some oil is used to make panipuri's.
Always make stiff pliable dough to get crispy puri's.
Potatoes can be mashed or can be kept as boiled cubes.
sometimes sprouts also can be added.
