udupi famous food uppu huli dosa

Ingredients
  

  • Idli rice/Raw rice - 1 cup
  • Urad dal/split black gram dal -2 tbsp
  • Fenugreek/methi seeds - 1 tsp
  • Tamarind - lemon size
  • Red chillies - 4-5
  • cumin seeds - 3-4 tsp
  • Coriander seeds - 4-5 tsp
  • Coconut scrapped- 1/2 cup
  • Powdered jaggery - 2-3 tbsp
  • Salt to taste

Instructions
 

  • Soak rice,dal and methi seeds together overnight and in the morning grind it.
  • Soak tamarind in water for 15 minutes take extract and keep.
  • Now grind Red chillies,cumin,coriander,jaggery,coconut by adding tamarind extract.
  • Mix both mixture in a container by adding salt.
  • Bring it to dosa consistency by adding needed water.
  • Now keep dosa pan pour dosa as you would do for regular dosa by adding oil.
  • your dosa is ready to serve.

Notes

This batter does not need any fermentation can made quickly and easily.
It can be had as such or with honey or with coconut jaggery mixture but
here I have served with coconut chutney.
In some places spices are roasted and ground but I have done as such.
Adding coconut makes the dosa soft and tasty.
