recipe for pea soup/fresh green peas soup

Total Time 25 minutes

Ingredients
  

  • Fresh green peas/pacha pattani - 3/4 cup
  • Big onion small size - 2
  • Water - 2 cups

FOR WHITE SAUCE:

  • All purpose flour/maida - 1 tbsp
  • Butter - 1 tbsp
  • Salt to taste
  • Black pepper powder to taste
  • Milk - 11/4 cup

Instructions
 

FOR WHITE SAUCE:

  • Melt butter in a pan and add maida,stir for a minute without browning.
  • Switch off the stove and blend milk little by little without lumps.
  • Turn on the stove and stir till it thickens,then add salt and pepper as per taste and switch off(transfer to a bowl).

FOR SOUP:

  • Boil 2 cups of water in a pan and add peas,onion to it and let it boil for 5-8 minutes.
  • Then when cool grind smoothly with salt added(for vegetable).
  • Strain it and mix it with the white sauce and bring it to boil till rawness goes off(2-3 minutes).
  • Serve immediately topping with fresh cream(can add pepper when serving its optional).

Notes

For thick white sauce you have to reduce the milk quantity and thinner sauce you have to add more milk.
Finally check for salt and pepper and adjust accordingly.
When you are preparing white sauce if it is lumpy can use blender to get a smooth sauce(easy way to get rid of lumps).
The color will change if we boil the soup for longer time and taste also changes.
