It’s an important tip that I will give you is that you have to make it in small batches as needed otherwise you will not get the same aroma and flavour when you store it for long. If you are doing in loads then you have to send it to mill and grind. Most importantly it is used in most homemade curry masala powder /curry powder recipeof the non-vegetarian curries and gravies. INGREDIENTS:

Coriander seeds /dhania – 1/2 cup
Dried red chillies – 3-4
Pepper /milagu – 1 tbsp
Sombu/fennel seeds – 1 tbsp
Poppy seeds/khus-khus – 1 tbsp
Star anise/annasi poo – 1 piece
Cloves/lavang – 1 tsp
Cinnamon /pattai – 1 two-inch piece
Curry leaves – few
Cardamom /elakkai – 5

 

METHOD:

Uses:

This curry powder can be used in any gravy both vegetarian or non-vegetarian,added mostly at the final stage for flavour and taste.

Ingredients

  • Ladies finger/okra/vendaikkai - 1/4 kg
  • Chick pea flour/besan/kadalai maavu - 3 tbsp
  • Chilli powder - 1 tbsp
  • Cumin powder/jeeragam - 1 tsp
  • Salt as per taste
  • Chat masala powder - 2 tsp
  • Coriander powder/dhania - 1 1/4 tsp
  • Turmeric powder - 1 tsp
  • Lemon juice - 1 tsp
  • Oil to fry

Instructions

  1. Wash and dry the ladies finger with a cotton cloth, then slit it into length wise portions and keep ready.
  2. Next take all the above masala’s given in the list mix them and add it to the cut vegetable ,mix it throughly by adding the lemon juice and then sprinkling little water at a time till all the mixture coats the vegetable nicely.
  3. Heat a kadai with oil and when hot fry them till crisp take out in a tissue and serve.

Ladies finger should be fresh and tender for this fry. Adding chilli powder and spices may be altered according to you taste wish. This fry should be fried in hot oil so that it turns crispy and crunchy.
