zucchini muffins recipezucchini muffins recipeI got to see this new shop of farm fresh ooty vegetables here in our farmers market opened newly because for years only country vegetables were available in our farmers market.I was excited to see refreshing bunches of carrot,beetroot,celery,leeks and zucchini.I got yellow and green zucchin’s along with other veggies and returned home thinking of making some soup or bread with zucchini.zucchini muffins recipeJust ended up making muffins( zucchini muffins recipe )out of yellow zucchini it came out so well that it all got finished at one go.Again I made the same recipe with the green zucchini and this time was able to click some photos for my blog!its a filling snack or even can be taken as a breakfast item.I was going through lots of zucchini muffin recipes and finally was satisfied by vahchefs recipe and did the same with slight variations!it was a total satisfying one.You can use oil alone instead of using in combination in that case take 1/4 cup oil alone .You can use 3/4 cup wheat flour and 1/4 cup maida combinations.

INGREDIENTS:

Zucchini – 1/2 cup(tightly packed)(grated)
All purpose flour/ maida – 1 cup
Sugar – 1/4 cup
Butter – 1tbsp
Oil – 3 tbsp
Pepper powder – 1 tsp
walnuts chopped – 21/2 tbsp
One cheese cube grated or any other processed cheese(3 tbsp)
Egg – 1
Baking powder – 1/2 tsp
Baking soda – a pinch

METHOD:

1.Grate zucchini and measure to make 1/2(tighten)cup.
2.Take dry ingredients like maida,baking powder and soda in separate bowl,mix well and keep ready.
3.In a bowl take sugar,butter,oil and pepper powder beat well till all are nicely blended.
4.Then add egg and beat well till it becomes fluffy.
5.Add grated zucchini,grated-cheese and walnuts to it and mix well.
6.In-between pre-heat oven at 170 degrees for ten minutes.
7.Line the muffin moulds with paper cups and keep ready.
8.Add the wet mixture to dry mixture and mix gently till well combined.
9.Fill this into cups till three fourth filled.
10.Bake it in preheated oven for 25 minutes.
11.Check for doneness by inserting a tooth pick,if it comes clean then its ready.

Notes

If needed can coat the muffin cups with little butter or oil.
You can use oil alone instead of using in combination in that case take 1/4 cup oil.
You can use 3/4 cup wheat flour and 1/4 cup maida combinations.
I have baked according to my oven temperature other oven types definitely varies so work accordingly.
