recipe for black rice /kavuni arisi payasamEver since I have tasted that chettinad special sweet with black rice(kavuni arisi) that my friend kavitha had brought it for a get together party!the taste really obsessed my mind.It was totally a healthy filling dessert I have ever had and made me feel how we are missing such treasured trove ingredients like black rice /karuppu arisi.Its not that if a rice takes long time to cook with extended soaking time is all bad for you and normal white rice that cooks in no time is all good for you.recipe for black rice /kavuni arisi payasamThe real concern should be about the nutritional and health benefit that we get but sadly we are only attracted by crowd pleasing fluffy white rice.While soaking it oozes out a wonderful black dye and when cooked with milk turns to an exotic purple. A very small portion of this kavuni/karuppu rice fills your stomach leaving you free for hours without any hunger pangs.I have finally done with this recipe for black rice /kavuni arisi payasam because my son will love payasam in any form!its a super hit delight really.It was a lovely purple coloured payasam that you will get naturally from this humble black rice that you will never give a miss.

INGREDIENTS:

Kavuni arisi/black rice – 1 cup
Water to boil rice – 3 cups
Milk – 3cups
Condensed milk – 1 tin(400ml)
Sugar – 1/4 cup
Cardamom powder – 1 tbsp

METHOD:

1.Wash rice and soak it at-least for 6-7 hours by adding 3 cups of water.
2.Then transfer this with same water to a pressure cooker.
3.Cook till tender by closing the lid(leave atleast 10 whistles or even more).
4.Keep them ready by mashing a little with back of a ladle.
5,Keep a vessel with 3 cups of milk and let it boil.
6.when it is boiling add the boiled rice and again stir continuously.
7.Add condensed milk and let it boil for some minutes.
8.Then add in the sugar and let it boil.
9.After that switch off and add cardamom powder and stir in.
10.Its ready to serve.

  • Keep a vessel with 3 cups of milk and let it boil.
  • when it is boiling add the boiled rice and again stir continuously.
  • Add condensed milk and let it boil for some minutes.
  • Then add in the sugar and let it boil.
  • After that switch off and add cardamom powder and stir in.
  • Its ready to serve.

Notes

Rice should be nicely cooked otherwise it will not be appreciable.
You can use sugar alone(I have used milkmaid too)to sweeten the payasam both ways it will be tasty.
No ghee or roasted nuts are needed for this payasam that's the specialty.
Even adding cardamom powder is purely optional.
If using sugar alone then you can add thick coconut extract at last.
Sweetness can be adjusted according to taste preferences.
