puri for panipuriThis whole may month is vacation period for most of our kids and for me too it’s a relaxing week here at my mom’s place.Till these years I haven’t stayed long at my mom’s place.This time only my mom was very much pleased and happy that I was with her for longer days.During my last visit I did pani puri with puri for panipuri. It was a real hit everybody my brother,sil,kids and my amma loved it totally.I did it from scratch from making puri to pani of-course my sister-in-law helped in rolling and frying.puri for paniThis time again my brother’s son Sarvesh wished me to do puri for panipuri so that his mom can store it and give him whenever he craves for it.When I was about to finish the whole thing it started raining and it was a wonderful enjoyable evening all sitting together having heart filling pani puri snack.In restaurants the sweet chutney too is served diluted but it’s purely our wish and need.Some chat outlets serve with sev sprinkles!karaboondi too makes excellent match.You can add boiled black channa with potatoes but I have skipped adding it.Its a little bit of tedious work but its worth trying !making our own puri’s than getting it from outside.If you plan well in advance its a very engaging chat snack to relish at home.

puri for panipuri  /making pani puri

 

INGREDIENTS:
For making puri:

Fine rava/sooji- 2 cups
Salt – 1/2 tsp
Oil – 1 tbsp
Baking soda – 1 tsp
Needed water to make stiff dough
All purpose flour/maida – 2-21/2 tbsp

For assembling and to serve:

Mashed potatoes with chat masala mixed – 1 cup(mashed with chunks)
Finely chopped onions – 3/4 cup
Some chopped coriander
Greenchutney diluted in water and kept ready
Sweet chutney(can dilute that also if needed)
Some sev/omapodi or kara boondhi

METHOD:
For making puri:

1.Take sooji in a bowl add baking soda,salt,oil and maida mix well.
2.Add water little by little make a stiff but pliable dough.
3.Knead continuously for at least 20 minutes.
4.Keep the bowl covered for marination with wet towel for 30 minutes.
5.After that knead for sometime and finely the dough should be smooth.
6.Make portions of dough take each portion roll out thin and cut out with circular cutter.
7.In between heat oil when its hot bring flame to medium and fry in batches adjusting the flame then and there.
8.Take out in a tissue and store in an airtight container.

For assembling and to serve:

9.Make every ingredient ready as told under “For assembling and to serve” section.
10.Make holes in puri’s.
11.Fill in potato mix then some onion and chopped coriander.
12.Pour some drops of sweet chutney then needed green water.
13.Top up with sev and enjoy.

Notes

Roll out thin and rolling should be even to get it crispy.
Even black channa is added along with potatoes it will also be good if you add it.
Instead of sev you can use boondhi also.
Sometimes sooji and salt alone with some oil is used to make panipuri's.
Always make stiff pliable dough to get crispy puri's.
Potatoes can be mashed or can be kept as boiled cubes.
