pongal kulambu /pongal kuzhambuMany of the South Indian houses women will be really busy cleaning and preparing for the very auspicious four days pongal fair and me too having my cleaning done with few works still pending!The very purpose of cleaning the house before pongal is to clear and get rid of useless things and wastes.The first day is the bhogi were these useless wastes are burnt up and the whole meaning of this day is “exit of useless things and entry of new things”.pongal kulambu /pongal kuzhambuThe second day is my favourite perum pongal or surya(sun)pongal where sakkarai pongal and ven(khara)pongal is done with pongal kulambu combined with other menu items as usual.For this pongal kulambu all the country vegetables that are in season are used like pumpkin,sweet potato,yam and field beans(mochai)some vegetables  should be there for this kulambu like yellow pumpkin(parangikkai) and mochai to make the curry more authentic.Toor dal added gives main body to this and have boiled this dal along with mochai but if you wish you can boil it separately any way its going to cook.Some people add even vadakam for tempering which gives special flavour and even some drops of ghee added would be great for this.Its a very needed side-dish for the pongal to relish.

pongal kulambu /pongal kuzhambu

 

INGREDIENTS:

Toor dal/thuvaram paruppu – 1/2 cup
Mochai /field beans – 3/4 cup
Tamarind extract – few tbsps according to taste and tanginess
Mustard/kadugu – 1 tsp
Jeera/cumin – 1 tsp
Few curry leaves
Some chopped coriander for garnish
Small onions – 1/2 cup
Tomato – 1 medium chopped
Yellow pumpkin/parangikkai,Avarakkai,Sweet potato,Brinjal – all together 1 cup
Salt to taste
Chilli powder – 2 tbsp
Turmericpowder – 2 tsp
Crushed garlic – 3-4 cloves
Asafoetida – 3/4 tsp
Oil – 2 tbsp

METHOD:

1.Soak tamarind and take extract and keep ready.
2.Boil toor dal with mochai and keep ready(adding little salt to it).
3.Keep a pressure cooker add oil ,add mustard and jeera.
4.When it splutters add crushed garlic,curry leaves,onions and tomatoes.
5.Add some asafoetida and cook nicely till tomatoes are soft.
6.Then add veggies with turmeric,salt and chilli powder.
7.Cook nicely then add dhal mixture with tamarind extract.
8.Mix up with needed water and let it boil.
9.Close the cooker and after one whistle switch off.
10.When sound subsides let it boil for some more time garnish with coriander leaves and serve.

Notes

You can cook the veggies in open pan but it takes time to finish.
Your choice of veggies may vary but yellow pumpkin and avarakkai is a must.
In stead of sweet potato you can use regular potato or even yam.
Add tamarind according to the tanginess and taste.
You can add little ghee at the end but its optional.
I have cooked both field beans and dal together but you can boil it separately.
