jam filled shortbread cookies/biscuitsHome baking is always a pleasure!a kind of satisfaction that we get from this is beyond comparison and after you savour the home-baked food you will always want to bake more and more in your own kitchen than snap up from a bakery shop.Baking in an oven is a special art right from setting temperature,using right utensils,timings all are important and ones we master it then baking with an oven(or microwave)becomes limitless.jam filled shortbread cookies/biscuitsThis is one among the rare cookie variations that has soft melting texture with the jam stuffed insides giving all the sweetness and this is the part which makes this short bread kind of biscuit very catchy and seductive.The cookie after its baked immediately should be rolled in the bed of powdered sugar so that it sticks well and coats the cookie.The cookie dough should be kneaded for some time to make it pliable and thus can be easily rolled out and cut! they are cut into triangles and the jam should be kept at the broad end and rolled out sealing the sides.After rolling it can be lifted upwards to give a specific shape or can be left as such and baked.For me it took twenty minutes to cook but as I would always say the oven timing always differs.

INGREDIENTS:

All purpose flour – 1 cup
Butter without salt – 3-31/4 tbsp
Powdered sugar – 1 tbsp for the cookie(some to roll cookies)
Vanilla essence – 1 tsp
Fresh cream – 4-5 tbsp
Any type of jam – 2tbsp(beat well and keep ready)

METHOD:

1.In a vessel add sugar and butter cream it well till it changes colour.
2.Add cream and essence stir nicely.
3.Then add flour to it and form a dough.
4.Knead for some time and dough should be not hard or too soft.
5.Spread with a roller to a thin sheet by dusting flour.
6.Cut to triangles.
7.Keep the jam at the broad end and roll by sealing both ends.
8.While rolling itself pre-heat oven to 180 degree centigrade for 10 minutes.
9.Arrange in a baking tray on a parchment sheet.
10.Bake it for 20 minutes.
11.When golden take out and immediately dust with some icing sugar.
12.Tender and biscut-y jam filled short breads are ready.

  • Tender and biscuit-y short breads are ready.

Notes

The oven temperature differs from oven to oven so adjust accordingly.
Always pre-heat oven before baking.
you can use any type of jam.
Here I have used mixed fruit jam.
While kneading if you feel that the dough is little hard then you can add some more cream and knead.
Roll the cookies in sugar immediately after it come s out of the oven.
you can even use caster sugar for rolling.
