murungai keerai /drumstick potato poriyal(stirfry)Our great golden agers are quite astonished now for the actuality that we buy drumstick leaves for money because as you may all know each house here during those days had murungakkai/drumstick leaves tree and it was a most valued must have tree.I bought some drumstick leaves from farmer’s market rolled it in newspaper and stored it in fridge for next day but somehow my menu changed and after two days took out and saw that all the leaves have fallen!now it was an easy job for me.murungai keerai /drumstick potato poriyal(stirfry)This experience happened so many years back and still now I find this tip as easy one!Recently one of my local friend here was always disinterested to cook murungai keerai because it consumes lots of time to clean!I confessed her with my little tip she was surprised totally to follow it immediately.This is a simple tip that most of us may know but I shared this to people who may not be aware off. When selecting for leaves it should be light green tender leaves but when we happen to buy some big dark coloured ones then it not only takes time to cook but it gives more bitter aroma and flavour. how to cook murungai keerai /drumstick potato poriyal(stirfry)

INGREDIENTS:

Drumstick leaves/murungaikeerai – 1 cup(cleaned leaves only)
Boiled potatoes – 2-3 cubed(medium-sized)
Chopped green chillies – 1
Turmeric powder – 1/2 tsp
Chilli powder – 1 tsp
Asafoetida – 1/4 tsp
Salt to taste
Mustard seeds/kadugu – 1/2 tsp
Urad dal/ulundhu – 1tbsp
Bengal gramdhal/kadala paruppu – 1 tbsp
Big onion – 1/4 cup (chopped)
Crushed garlic cloves – 4-5,oil – 1 tbsp

METHOD:

1.Do all the preparatory work and be ready with ingredients.
2.Keep a kadai with a tbsp of oil and when it heats up add mustard,bengal gram and urad dal(I have put some extra dals(more) for seasoning if you don’t like adding then be free to add only little according to your need)
3.When seeds splutter and dal browns add crushed garlic and onions with chillies.
4.Saute for some time then add cubed potatoes,salt,turmeric chilli powders and asafoetida and stir nicely till rawness goes off.
5.Then add drumstick leaves and stir.
6.Now sprinkle some water close with lid and after 2-3 minutes open stir again nicely and switch off.
7.Serve with hot rice and sambar or rasam.
