This urulaikilangu varuval is very simple and easy to make at the same time it’s very addictive. I love this particular preparation since my childhood days. A simple rasam or a curd rice will all be enough to go with this urulaikilangu varuval. This is done with skin on and there lies the taste.Without skin means it tastes good but it’s always different. The spiciness can be added according to individual liking’s. The very specialty of this is that it does not need any onions and its that simple to make.

INGREDIENTS:

Potatoes /urulai – 3-4(medium-sized,chopped finely with skin after cleaning)
Salt to taste
chilli powder – 1 tbsp
Oil – 4-5 tbsp
Mustard seeds – 1 tsp
Turmeric powder – 1 tsp
Asafoetida /hing – 1/2 tsp(I used paste ,u can use powder)

METHOD:

1.Wash the vegetables thoroughly in hot water to remove the dirt and then chop them with skin into small pieces.
2.Keep oil in a kadai add mustard to splutter,add asafoetida paste.
3.Then add potatoes saute by adding needed salt to it.
4.Add turmeric and chilli powder and keep on stirring.
5.keep the flame at medium high and cook.
6.The potato will become nicely roasted and cooked .
7.Switch off and serve as side dish for rice(with rasam or curd rice).

  • Then add potatoes saute by adding needed salt to it.
  • Add turmeric and chilli powder and keep on stirring.
  • keep the flame at medium high and cook.
  • The potato will become nicely roasted and cooked .
  • Switch off and serve as side dish for rice.

Notes

If you want the potatoes to be crispy lower the flame leave it by stirring then and there.
Add chilli powder according to your taste.
I usually add curry leaves,will give nice flavour.
I have added asafoetida paste,you can use powder.
