snowball cookie/easy bake christmas cookiesWhen I was shaping my snowball cookie/easy bake christmas cookies I was taken back to the memory lane of my childhood.On the snow-covered hill ranges we as a group were playing with snow!compressing a big dollop of snow with each others hands and throwing up!! it was great fun!!can’t forget those nostalgic moments till now. snowball cookiesThis snowball cookie is so influential that it is called by different names around the world(melting moments,Mexican wedding cake)for the melting moment cookie we add some corn flour that it melts in your mouth!it is done without the nuts.The usual snowball cookie/easy bake christmas cookies is topped with cherries to finish.They are really a special christmas cookie which is easy to make and tastes awesome.

INGREDIENTS:

All purpose flour/maida – 2 cups
Powdered sugar – 11/2 cups(1 cup for the dough and 1/2 for rolling)
Vanilla essence – 1 tsp
Almonds coarsely powdered – 1 cup
Butter(cold but not hard) – 1 cup

METHOD:

1.Take powdered sugar in a bowl and sieve the flour into it and add butter..Combine every thing by adding vanilla essence and almond mixture to it.
2.Pre-heat oven at 185 degrees for 10-12 minutes.
3.The mixture will form crumbles and not dough.
4.Now when you try to shape it will hold the shape and this the right consistency.
5.Shape the mixture into balls and place it in a butter paper lined tray and bake it for 20 minutes in the pre-heated oven.
6.Take out and when it is still warm roll it in powdered sugar mixture and your snow ball cookies are ready(don’t roll when hot)

  • Shape the mixture into balls and place it in a butter paper lined tray and bake it for 20 minutes in the pre-heated oven.
  • Take out and when it is still warm roll it in powdered sugar mixture and your snow ball cookies are ready(don't roll when hot)

Notes

When you take out after baking the balls should be lightly golden at the top this is how it looks when done.
When you try to shape it will hold the shape and this the right consistency.
Butter should be not hard but still cold.
Don't powder the almonds finely it should be chunky.
Don't roll when hot it will melt.
According to my oven temperature I have set it,adjust according to yours.
