how to prepare punjabi lassi /sweet lassi

INGREDIENTS:

Yogurt/curd(thick) – 1 cup
Sugar – 5 tbsp or according to taste
cardamom powder – 1/2 tsp(powder the seeds alone)some for garnish.
Ice cubes – 8-10
Cold milk – 1/2 cup
Malai/fresh-cream(layer collected from top of the milk) – 2 tbsp and some crushed badam for garnish.

METHOD:

1.First in a mixer add curd,cardamom powder and sugar.
2.Then ice-cubes and milk.
3.Beat the mixture well.
4.Then add malai and beat well(malai is the top layer of thick fat collected from milk).
5.Creamy lassi is ready.
6.Serve cool.

  • Ice cubes - 8-10
  • Cold milk - 1/2 cup
  • Malai/fresh-cream layer collected from top of the milk - 2 tbsp
  • Some crushed badam for garnish.

Instructions
 

  • First in a mixer add curd,cardamom powder and sugar.
  • Then ice-cubes and milk.
  • Beat the mixture well.
  • Then add malai and beat well(malai is the top layer of thick fat collected from milk).
  • Creamy lassi is ready.
  • Serve cool.

Notes

Adding malai is optional.
Malai is the layer collected from top of the milk.
Instead of ice cubes you can add water but I prefer adding ice-cubes.
For cardamom powder only the seeds are powdered and added.
Perfect fresh curd/yogurts works great for this lassi.

    Oh goodness Vani! You made the typical lassi from north. While growing up, no lassi was complete without that thick layer of malai. Now a days we skip it for health reasons…but spot on girl! Love it!❤️
