homemade marshmallow recipeMy son Charan was playing at his dear friend Shibu’s house when he returned home he wanted to convey something to me.His face was filled with surprise and impatience.He said with all excitement that shibu’s aunt did “homemade marshmallow (s) all by herself.Charan enjoyed marshmallows done there at shibu’s place and he requested me if I can try it for him. When I see these marshmallows in recipe books and stores I would think it will be never a homemade job homemade marshmallow recipecause thought it was a complicated recipe to make at home.After he asked me I was searching for the perfect recipe without eggs and found the exact method at mallika’s web space named “vegbowl”. In conclusion it turned out excellent at first go itself mainly charan was totally satisfied.The best part of this recipe is that it gives excellent results without adding any corn syrup or eggs. The first batch made got over in one day because my brothers children where also there to empty the box.Setting time takes at least 4-6 hours or even you can keep it overnight.Once set it will become bouncy when touched.Don’t over do the mixture(beating) if it becomes too stiff then transferring will be too tough and sticky.Thick ribbon stage will be correct  for transferring the mixture to tray.

INGREDIENTS:’

Gelatin(ordinary without flavoring) – 2 tbsp
Sugar(granulated) – 2 cups
Water for sugar syrup – 3/4 cup
Cold water for soaking gelatin – 1/2 cup
Vanilla essence – 11/2tsp
Cornflour and powdered sugar mix(equal amounts making 1 cup)
Oil for greasing

METHOD:

1.Line a suitable square tray with butter paper or even an aluminum foil will do.
2.To that smear oil to whole area so that content does not stick.
3.Keep ready with the beater.
4.Take a spatula and grease it with some oil to transfer the finished content.
5.Take ice cold water in a bowl sprinkle gelatin don’t mix,keep it aside(for five minutes).
6.Heat up water with sugar and let it bubble till all the sugar get dissolved.
7.When white bubbles form check for one string consistency.
8.Take little drop of sugar syrup in a plate let it cool for a second.
9.Test between fingers(one string should form).
10.Now first beat gelatin mix with beater till combined.
11.Then add hot syrup little by little with continuous beating to gelatin.
12.After all the syrup has been added add vanilla essence and slowly increase speed to high.
13.The whole mixture will form ribbons and when thick ribbons form stop the process.
14.Transfer it to the greased tray using greased spatula.
15.Let it cool and after that dust upper layer with cornflour powdered sugar mix.
16.Setting time is 4-6 hours or overnight.
17.Invert the content and take off the butter paper and dust that too with cornflour sugar mix.
18.Grease the knife before cutting the marshmallows.
19.After cutting each strip and squares roll them in flour mix and store.

Sometimes it may set within 4 hours too but even if it sets you can leave it for more and then cut no worries

Notes

Be watchful for the sugar syrup consistency for flawless result.
Don't forget to grease pan,spatula and cutting knife.
If we beat too stiff then pouring and setting will be too difficult.
Rolling each portion with flour is needed after cutting.
Instead of vanilla essence any flavouring you can add according to your wish.
Serrated knife was very useful for me in cutting.

    Hi da… This looks really awesome. Can’t even think we can do marshmallows at home ma. You nailed it. But, Read somewhere that gelatin got bones of pigs and beef. Is possible todo the same using agar agar or any other alternative ??

      I have not tried it with agar agar so no idea …heard somewhere that you can use it.
