easy to make sweet dish/kambu kolukkataiI have heard about many usual varieties of foodstuff’s made from bajra/pearl millet like roti’s, porridge’s, idli!and even dosa’s but not a word about a kolukattai made out of pearl millet!!!Recently my college friends and myself were discussing about giving healthy snacks to kids my friend sangeetha unveiled about kambu kolukattai and she gave a full recipe procedure to do.My other associate friends and myself tried it out in our home and it turned out really well ! more over our kids enjoyed it thoroughly .I thanked Sangeetha!!! easy to make sweet dish/kambu kolukkataifor giving me a great healthy recipe.Beauty of this kolukattai is that it is an easy to make sweet dish,protein rich and easily digestible.I have gently roasted the millet in ghee to enhance more flavor in it.When we mix all the ingredients the final consistency should be bit loose because after some time it will be absorbing all the moisture and  then we’ll be able to shape it.The meaning of pidi kolukattai is that it takes the shape of our finger’s.

INGREDIENTS:

Pearl millet/bajra kurunai(kambu) – 1 cup
Raw rice(pacharisi) – 1/2 cup
Water as required
cardamom powder – 3/4 tsp
Salt a pinch
Grated coconut -3-4 tbsp
Jaggery – 1/4 cup
(make syrup of jaggery by boiling it with some water and straining it to remove all impurities)(little ghee for roasting kambu)

METHOD:

1.Clean kambu kurunai,wash it once and fry it with little ghee.
2.Fry raw rice separately without adding ghee.
3.Powder both separately.
4.Then add ground mixture(kambu and rice powder)in a bowl.
5.Add cardamom powder coconut scrapping,salt and jaggery syrup.
6.Now make the mixture to a loose consistency by adding required water.
7.Leave the mixture for 5 minutes.
8.Now shape the kolukattai with hands.
9.Then steam out the dumplings in a suitable steamer.(idli maker)
10.Steam it for 5-10 minutes.
11.Now your healthy snack is ready to be served.

Total Time 25 minutes

Ingredients
  

  • Pearl millet/bajra kurunai kambu - 1 cup
  • Little ghee for roasting kambu
  • Raw rice pacharisi - 1/2 cup
  • Water as required
  • cardamom powder - 3/4 tsp
  • Salt a pinch

  • Jaggery - 1/4 cup
  • make syrup of jaggery by boiling it with some water and straining it to remove all impurities

Notes

When we mix all the ingredients the final consistency should be bit loose

We can roast pearl millet without ghee also it is up to you.
Jaggery amount can be slightly increased according to the need.

    If I am using Kambu flour, do I have to dry roast it? And the measurement is same for using the flour? Please advise.

      Take same measurements if using Kambu flour(1 cup flour and 1/2 cup rice flour) also it will turn out well and thank u dear
